This recipe is by far the best cookie recipe I have ever tasted. The recipe below makes about 24 cookies, depending on the cookie size you like.
Ingredients:
2 ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
1 stick of unsalted butter, at room temperature
2 cups packed light brown sugar
2 large eggs
1 tablespoon vanilla extract
1 cup Reese’s Peanut Butter Chips
½ cup Reese’s Mini Cups
½ cup Reese’s Pieces
Directions:
In a mixing bowl stir together the flour, baking soda & salt. In a separate bowl beat the butter and sugar together until it is light and fluffy. Then add the eggs and vanilla extract to the sugar mixture, beat until smooth. Gradually add the flour mixture into the sugar batter and mix until the batter turns into dough. With the mixer on high, add in the Reese’s Peanut Butter Chips, Mini Cups, & Pieces, mix until the Reese’s are throughout the entire batter.
Place the bowl of cookie dough in the refrigerator for an hour.
Preheat the oven to 350°F.
Spray the cookie sheets with baking or cooking spray.
Drop spoonsful of dough on to the cookie sheet. Bake 10-11 minutes until they start to golden on top. Place the baking sheet on a cooling rack and allow the cookies to rest for a minute before removing them from the baking sheet.
TIP: I do not use a cookie scooper or roll the dough into balls. This messes with how the cookies lay when they bake. Just think less is more when it comes to moving around the dough after the chips are mixed in.
