Ingredients:
½ cup Brown Sugar
1 tbs Butter
3 mashed Bananas
1 egg
2 tsp vanilla extract
2 cups rolled oats (1 cup processed to a flour)
¾ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup butterscotch baking chips
Directions:
Preheat oven to 350°F.
In a food processor, process one cup of rolled oats to a flour like texture.
Combine all ingredients into a large mixing bowl. (I mix all wet together and then gradually add in the dry ingredients)
Line a loaf pan with parchment paper and spray with cooking spray and pour the batter in the loaf pan. (Should be about halfway fully)
Bake for 50 minutes or until a toothpick inserted in the middle comes out clean.
Cool completely, before removing from pan. Slice and serve. Aaron says it goes best with vanilla ice cream.
