Mexicali Chicken Balls


Makes 68-70 (1.5”-2” balls)


Ingredients:

3 lbs ground chicken

½ packet taco seasoning (we use low sodium)

1 packet of ranch seasoning

1 cup fiesta shredded cheese

6 eggs

1 ½ cup breadcrumbs, plain


Directions:

Preheat oven to 350°F.


Line baking sheet with parchment paper or if not available spray the baking sheet with baking spray.


In large bowl, mix all ingredients until evenly combined. Roll the chicken mixture into 1”- 2” balls and place them onto the baking sheet about an inch apart.


Bake for 30 minutes or until the internal temperature is 165°F.
