A Thanksgiving Favorite! I am told regularly that this Turkey is the by far the Best they have ever tasted. Note: it is a 3-day process, and you will need 3x the amount of seasonings that are listed.
Ingredients:
15-20lb Whole Turkey, thawed and with neck and giblets removed)
6 Garlic Cloves, minced
3 tsp Dried Rosemary
3 tsp Dried Sage
3 tsp Dried Thyme
1 ½ tsp Black Pepper
3 tsp Salt
6 Tbs Extra Virgin Olive Oil
Directions:
2-3 Days prior to cooking, in a small bowl mix all ingredients except the whole turkey.
Rinse the Turkey and pat dry. Then rub the seasoning mixture all over the turkey making sure to get a good amount underneath the skin. Let the turkey rest at least 12 hours in the fridge before repeating two more times.
When you are applying the seasoning mixture for the third time, preheat the oven to 350°F.
Place the turkey upside down in a roasting pan or on a baking sheet with a cooking rack.
Bake the turkey for 3 hours; basting with the drippings every 30 minutes.
Remove the turkey from the oven and flip it over for the remaining baking time. This is a tricky process, be careful not to burn yourself.
Bake for the remaining ½ hour to hour or until the internal temperature reaches 165°F in the breast or 175°F in the thigh.
Once cooked, remove from the oven, and let the turkey rest for at least 30 minutes before carving and serving.
