Ingredients:
1lb Fresh Green Beans
2 Tbs. Pine Nuts
1 Bunch of Green Onions (5-6 stalks)
1 Tbs. Coconut Oil
1 tsp. Apple Cider Vinegar
1Tbs. Lemon Juice
Salt and Pepper, to taste.
Directions:
In a large dry skillet toast pine nuts until golden brown. Set the toasted pine nuts aside until later.
Add coconut oil to the empty skillet, melt the coconut oil. Thinly slice the entire green onion and add to the skillet. Turn the heat to low cover and cook until caramelized; stirring frequently to avoid burning them. (Approximately 15 minutes) Once caramelized set aside until later.
In a large pot, bring water to a boil and add in the green beans. Boil them for 3-4 minutes until the beans become bright green. Drain and add to the large skillet, along with the caramelized green onions and pine nuts you set aside.
Bring the large skillet with the green beans, caramelized green onions and pine nuts to a medium-low heat and add in the apple cider vinegar, lemon juice, salt, and pepper. Stir constantly until it is completely combined; 3-4 minutes and serve warm.
